The Details
Ordering
It's easy to place an order. You can
call,
email or
send a note through the contact form any day of the week. I return all inquiries within 24 hours or less. See the
Contact section for information.
In most cases, all orders require a 1 week lead time. I regret that I cannot take last minute orders. This is because I am generally booked up 1 week in advance plus I start all elements of the dessert from scratch, including caramels, fillings, crème fraiche, ganaches, etc. (freshness of your order is key!). During the holiday seasons, these lead times will increase, but please call or write to inquire. It's my desire to be able to fill every order, so please give me ample lead time to ensure I can have the pleasure of providing what you need. Click on the calendar image below to check my availability or to check the date your confirmed order is scheduled by looking for your initials.
Cancellation
Because I make everything to order and insist on freshness, most components of my desserts are started at the last possible moment, generally giving ample time to cancel, if you need, before work is started. However, if a cancellation is necessary, I can only reimburse that portion beyond what costs I may have incurred at the time of cancellation. If a dessert is completed entirely and the order must be cancelled, full payment is expected. I am happy to try to hold the dessert for you should you be able to pick it up at a delayed date. Please ask for more details.
Delivery
Delivery is offered within a 15 mile radius of Addison, TX seven days/week. The delivery fee will generally range from $5 to $25, depending on the location. I always provide a quote of the delivery price when the order is placed. Pick up is also available.
Payment
By cash or check only please. Please make all checks payable to The Fromagerie.
Tasting
Because all of my products are made only when ordered, I do not keep samples on hand for tasting. However, depending on what item is requested, I may be able to arrange tasting of components or of chocolates used. Please inquire and I will try to accommodate you as best as I can.
Special Requests/Needs
Special requests are always welcome. In fact, some of my desserts I've created and now offer were a result of customer requests. Please ask if there is a particular cake or dessert or flavors you like that you do not see on the site; I may be able to create what you're looking for. But please be sure to give me ample time so that I can ensure I can create exactly what you'd like. I'm always developing new things, so please ask if you don't find what you're looking for.
For my customers with food allergies and special needs: please note that nuts are often a component of my crusts, cakes and fillings. Because of the potential severity of nut allergies, I generally decline orders for any type of dessert for someone with this type of allergy, as even the smallest exposure to nut oils can cause severe reactions. Some of my desserts are flourless. I do not do egg or milk/dairy substitutions as this requires specialized formulas and ingredients. Please ask about the possibility of removing liqueurs from cakes or desserts that contain them. Do not hesitate to ask about ingredient specifics if you have certain needs or concerns. Although I try to accommodate these special needs as best I can, substitutions are not my specialty.
Shipping
I do offer shipping on some items. The shipping/handling fee is a flat rate of $20 via FedEx
1-day ground service within 300 miles of Dallas, TX.
Longer distances may require overnight by air depending on warmer temperatures. During times of warm weather, if items are not shipped overnight, I cannot guarantee their condition on arrival. Items are shipped in special Polar Tech® boxes with foam inserts and freezer packs designed especially for shipping food items. Items that are shippable are marked in the
Pure Chocolate Desserts Gallery descriptions. Please contact me anytime if you have additional questions.
Onsite Service/Setup
For large parties and weddings where on-site setup and plating is necessary, an hourly fee may be charged for the additional labor and time. Please ask for details.
